Homemade Granola


6 cups rolled oats
1/4 cup sliced almonds
1/4 cup chopped pecans
1/4 cup coconut
2 tablespoons brown sugar
1/4 teaspoon salt
1/3 cup maple syrup
1/4 cup honey
1/4 cup pineapple juice
1/2 teaspoon almond or vanilla extract
Cooking spray
1/4 cup dried fruit of your choice

1. Preheat oven to 300 degrees
2. Combine first 6 ingredients in a large bowl.
3. Add syrup, honey, juice and extract. Toss well.
4. Spread mixture evenly onto a baking sheet coated with cooking spray.
5. Bake at 300 degrees for 45 minutes, stirring every 15 minutes.
6. Cool completely. Store in an airtight container

Yield: 10 servings (serving size = 1/2 cup)
